Success Saturday: Christy P.

I’ve known Christy since before high school, and we reconnected a couple of years ago on social media. I’ve seen her progress continue, all because of her amazing dedication to her goal!

1. Why did you decide to lose weight/change your lifestyle? (Any and all
 reason)

In August 2013, I decided I wanted more out of life. I wanted to feel better, have more energy and have more confidence in myself. I was tired of coming home after work everyday and taking a nap.

2. What exercise did you do? (List everything)
 
I started out walking in September. I added a community ed exercise class (it included step aerobics, kick boxing and strength training) in October. I joined a gym in November that offers body pump and Zumba. 

3. How did you change your eating habits?
I use my fitness pal to track my calorie intake. I cut out soda’s all together. I only eat red meat every once in awhile. I either eat baked tilapia or chicken and sliced turkey. I have increased my vegetable and fruit intake. I eat breakfast now and I have added snacks to my day. 

4. Did you use any nutritional supplements?
 
The only thing that I have used is Spark. I started using that about two months ago. 

5. Did you have support? (Group, friend, online community, etc.)

Yes, all of my family and friends have been very supportive. I also follow many pages on FB.

6. What do you feel is the top thing you’ve gotten out of your journey?

Not to give up on your dream because of a few unhealthy decisions or days. 

7. What is your next goal?

 I still have a ways to go so I just want to keep up my steady pace and boost my strength training as I go.

Monday Meals: Chicken Ranch Tenders

If you have kids and your family loves chicken, you will love this meal. I found the base recipe at 5dollardinners.com, and in my kitchen fashion, I modified, even a pretty healthy recipe, to make it even healthier. Chicken Ranch Tenders

Preparation Time – 10 minutes

Cooking Time – 20-25 minutes

Ingredients

  • 1 package skinless, boneless chicken tenders (I made about 12 tenders)
  • 2 jumbo eggs
  • 1/2 cup milk of choice
  • 1 cup bread crumbs (I used homemade, whole wheat bread crumbs
  • 1 – 1 oz. packet Original Hidden Valley mix for dipping (I used Hidden Valley for this test run, but I will probably try to make my own ranch mix and/or look for a Tastefully Simple gluten-free mix)
  • Marinara sauce for dipping (I used an all natural marinara jarred sauce because of time constraints, but if you have some homemade, even better.)
  • Served with steamed broccoli

Directions

  • Preheat oven to 350. Grease a cookie sheet with non-stick spray, or line a cookie sheet with non-stick baking mat.
  • Whisk the 2 eggs and milk in a small bowl. Mix together the bread crumbs and ranch mix in another bowl.
  • Dip each chicken piece into the egg, then coat in the ranch-bread crumb mixture. Place on the cookie sheet, and repeat until all chicken pieces are coated.
  • Bake in the preheated oven for 20-25 minutes, or until all chicken pieces are cooked through and have turned slightly golden. Remove from oven and let cool slightly before serving.
  • Serve tenders with marinara sauce and other side dishes.

This meal is way easy to prep, way easy to cook, and it’s a HUGE hit with the kiddos. Fantastic substitute for chicken nuggets or any breaded chicken dish. This is definitely going in my regular rotation. Enjoy!

Shakeology Fudgy Oat Bars

My friend and teammate, Allison Tibbs, shared this recipe with me from the Team Beachbody website, and I cannot wait to use it during the holidays, both as foodie gifts and for my sweet tooth.

This is the ultimate sweet snack that is tasty, decadent, and good for you.  This is one sweet treat that can curb that craving while not setting you back on your journey of being healthy and fit! Enjoy! Make sure you comment below if you try them.

 Total Time: 1 hr., 10 min.Prep Time: 10 min.Yield: 4 bars

Ingredients:
• 1 scoop Chocolate Shakeology
• 1 scoop Beachbody Whey Protein Powder
• ½ cup natural peanut butter
• ½ banana
• ½ cup rolled oats
Preparation:
1. Mix all ingredients together.
2. Freeze for at least 90 minutes in an 8″ x 8″ pan.
4. Remove from freezer, cut into 4 squares.
